My creamy, cheesy, loaded mashed faux-tatoes. A very easy to make alternative to real mashed potatoes. Made with cauliflower instead of potatoes, and with less than 5g net carbs per serving, itโ€™s a great keto or low carb recipe.

Ingredients:
Food Processor
Aluminum Foil (heavy duty)
1 head cauliflower
6 to 8 โ€“ garlic cloves, peeled
salt & pepper for roasting
1/3 cup โ€“ heavy cream
1/3 cup โ€“ sour cream
1/2 cup โ€“ grated cheddar cheese
3/4 tsp โ€“ salt
1/2 tsp โ€“ black pepper
8 slices โ€“ cooked bacon, chopped
2 Tbs โ€“ dried chives

Per serving (recipe divided by 5):
